Cook from frozen

Frozen sambousek — meat

Dough filled with beef, onion and pine nuts.

Fry them frozen in hot oil, 4 to 5 minutes, until golden. Do not leave them to thaw first.

Thin pastry rolled around cheese.

Bread dough filled with spinach, onion, lemon and sumac.

Bake them frozen at 200°C for 20 to 25 minutes. Do not fry them.

Bulgur filled with beef, onion and pine nuts.

Kibbeh bil saniyeh

Baked kibbeh, with a layer of beef and pine nuts in the middle.

Heat it covered at 180°C for 25 minutes. Take the cover off for the last 5 minutes.

Batata soufflé

Mashed potato on the top and bottom, beef with onion in the middle.

Heat it covered at 180°C for 30 minutes, then take the cover off for 10 minutes so the top goes crisp again.

Lasagna

Pasta layers with beef and béchamel. Already baked.

Heat it frozen and covered at 180°C for 35 to 40 minutes. Leave it 10 minutes before you cut it.

Small open pies with beef. Already baked.

Heat them frozen at 180°C for 12 to 15 minutes. Squeeze lemon on them before eating.

Frozen shish barak

Small dough parcels filled with beef. You cook them in laban.

Put them in the laban while it is cooking, 10 to 15 minutes. Keep stirring the laban the whole time or it will split.

Vine leaves rolled with rice, meat and tomato. Not cooked yet.

Put them in the pot frozen so they keep their shape. Cover with water and lemon, put a plate on top, and cook 45 minutes on low heat.

Courgettes filled with rice and beef. Not cooked yet.

Molokhia with chicken

Molokhia leaves cooked with chicken, coriander and garlic. Rice is not included.

Heat it on low with a little water and stir. Do not let it boil hard.

Moghrabieh with chicken

Moghrabieh beads with chicken, chickpeas and small onions, in their broth.

Heat it on low and add water or broth as you go. The beads keep drinking the liquid, so it gets thick.

White beans cooked with beef in tomato. Rice is not included.

Heat it on low for 15 minutes and stir, so it does not stick to the pot.

Bamieh with lamb

Okra cooked with lamb, tomato and garlic. Rice is not included.

Heat it on low for 15 minutes. Stir as little as you can — the okra breaks.

Cook from frozen

Frozen kafta patties

Minced beef with parsley and onion, shaped into patties. Raw.

Cook them frozen in a hot pan, 4 minutes each side. The meat is raw, so let it cook all the way through.

Hummus

Chickpeas, tahini, lemon and garlic.

Leave it in the fridge overnight to thaw. Do not use the microwave. Stir it well and add a little olive oil before serving.

What you can order

The store carries the dishes that take the longest to make at home. Pastries by the bag — sambousek with meat or cheese, rekakat, spinach fatayer, kibbeh balls. Trays for four — kibbeh bil saniyeh, batata soufflé, lasagna, sfeeha. Stuffed and rolled by hand — shish barak, warak enab with or without meat, kousa mahshi. Cooked mains by the portion — molokhia and moghrabieh with chicken, fasolia with beef, bamieh with lamb. Plus kafta patties and hummus.

How it works

Order at least two days ahead. Everything is cooked in our kitchen in Keserwan, packed the same afternoon, and delivered to your door in Beirut, Metn or Keserwan in the morning window. Each item tells you how to cook it and how long it keeps — most of the pastries go straight from the freezer into hot oil or the oven, and the trays only need reheating.
